Welcome to the Christmas Season

I hope everyone had a great and delicious Thanksgiving! Be safe while dealing with crazy shoppers today! In order to ring in this holiday season, we are going to start with fudge. Peppermint fudge. :] I personally love fudge, some people don't - and I think they are crazy. This fudge recipe is on the sweeter side, so if you would want to tone that down, you can use UNSWEETENED  chocolate instead of the white chocolate. Fresh peppermint leaves are ideal for this, if you can't find peppermint leaves, buy some peppermint tea! it works perfect for this

Peppermint Fudge
[recipe is adapted from chocolates & confections by Peter Greweling]
Sugar: 156 g
Heavy cream: 51 g
Milk: 25 g
Glucose Syrup: 48 g
Salt: pinch
peppermint leaves: 10 g [or 3 tea bags]
White chocolate: 40 g

1. combine sugar, cream, milk, glucose, salt, and peppermint together in a small saucepan.
2. Bring to a boil and cook until 240 F, stirring constantly
3. Pour into a large heat proof bowl and allow to sit for 3 minutes
4. Place white chocolate ontop of the mixture and stir for 3 minutes, constantly. It will start to stiffen up.
5. Pour out into a "frame" lined with parchment paper, and allow it to set completely.
EAT.
